Highlights the Diversity of Coastal India

Keeping true to their coastal Indian theme, the first decision taken by Team JHOL in 2023 is to stop serving naan and kulchas as there is an array of breads from coastal India waiting to be shared. 

KallappamCuttack Dahi Vada Aloo Dum

Kallappam
Kallappam is a fermented rice pancake. Traditionally, palm wine or kallu (toddy) is used for fermenting the batter. This bread is a common staple in the state of Kerala and has a few variations as well. 

Cuttack Dahi Vada Aloo Dum
If you ask any one from Odisha, an eastern state in India, what their most nostalgic dish is: Dahi Vada Aloo Dum will definitely be at the top of the list. It is a type of chaat (snack) which is prepared by soaking vadas (fried lentil balls) in light dahi (yogurt) water as well as sweet water, mixed with mustard seeds and curry leaves. 

Aloo Dum (potato curry) and Ghugni (pea curry) are added to it with Jhol’s house spice blend of masala and sev (small crunchy noodle snacks made from chickpea flour paste). This dish is served with a side of light buttermilk which you should sip it after your first bite. Bringing this nostalgic dish from Odisha to Bangkok is their new Executive Chef, Sanchit Sahu.

East coast style fried chicken is also introduced into JHOL’s new a la carte menu. Apple fennel slaw alongside spicy potato dip completes this simple yet impactful dish. It is a great accompaniment for cocktail hours. Berhampur (Bhramapur) is a coastal city in the state of Odisha and is known as the food capital of Odisha and Silk City of India.

Badanekayi Ennegayi
An interpretation of a popular dish from North Karnataka made with stuffed eggplant in a thick and spicy coconut based gravy-served with Thecha Paratha. A unique ingredient in this dish is Niger Seeds (also known as Ram Till), which gives this dish a distinctive flavour.

Patrani MacchiPatrani Macchi

Patrani Macchi
Patrani Macchi is one of the classic dishes of Parsi cuisine. It literally means fish wrapped in leaves and steamed. The Parsis migrated from Persia to India and are descendants of the Persian Zoroastrians, a small but influential community. Parsis love their food and are serious about it. The fish is covered in coconut chutney, wrapped in banana leaves and steamed to perfection. JHOL serves it with muli (radish) raita and straw potatoes. 

Daab Chingri

Daab Chingri
An authentic Bengali prawn curry, where in its pure Bengali name Daab refers to tender coconut and Chingri means prawn. Traditionally, prawns are cooked inside a tender coconut shell with a mustard-coconut-poppy seeds gravy. This preparation is hugely popular in West Bengal state of India and Bangladesh.

NH 5 Chicken Bharta
NH 5 refers to National Highway 5, a major highway that connects the west and east side of India. NH 5 traverses the states of Punjab, Haryana, Himachal Pradesh and the union territory of Chandigarh. At highway rest stops, one can pull over for a hearty meal and Chicken Bharta is a popular one. This interpretation presents pulled chicken in a mild curry, topped with duck egg and served with Mughlai Paratha.
