Born and raised in Chaoshan, Guangdong, Chef Fei is one of China’s most renowned chefs. He started his career at the age of 16 and became an Executive Chef by the age of just 20. Today, with more than three decades of culinary experience behind him, he is most well-known for creative Cantonese cuisine where truly innovative dishes are crafted from first-class seasonal ingredients. In doing so, his menus always embody the refinement and perfection of Cantonese cuisine in inventive new ways.

His innovative fusion-style appetisers set the stage for a multi-sensory culinary journey through the flavours of Chaozhou and Guangdong. From seafood delicacies to traditional barbecue items, handmade dim sum to double-boiled soups, Chef Fei draws on centuries of proud Chinese culinary history and his own decades of experience. 

By using techniques including chicken broth braising, clear simmering, soybean paste cooking, baking, and charcoal grilling, he ensures that dishes at Yan Garden are "fresh but not bland, luxurious yet flavourful," offering guests a decadent, sophisticated dining experience where carefully selected ingredients are always based on seasonality and origin. 

Perfect pairings for his elegant cuisine include international wines with a focus on Chinese red and white wines from Xinjiang, Ningxia and Shanxi. A large selection of Chinese vintage specialty teas also beautifully complements the flavours of his dishes, as do the restaurant’s extensive lists of Baijiu and spirits.
