Celebrated for his innovative techniques and global culinary influence, Chef Schuller will curate a special 4-course lunch at $888 per person and 6−course dinner at $1,988 per person, blending authentic Italian flavours with contemporary artistry.
Chef Schuller began his career at age 15, training in Italy before honing his skills across France and Germany. His experience in Hong Kong includes pioneering venues like Michelin-starred Octavium and 8½ Otto e Mezzo Bombana. Chef Schuller’s expertise spans haute cuisine and gastronomy. His return to Hong Kong marks a rare opportunity to experience his Italian classics and refined simplicity.
The 4-course lunch menu offers impressive creations, starting with steam abalone served with deep fried zucchini trombetta and smoked ricotta cheese, premium abalone is steamed to retain its natural sweetness, pairs unexpectedly well with crispy zucchini trombetta and smoked ricotta. The cheese's creamy sharpness cuts through the abalone's richness, creating perfect balance. Linguine in garlic, chili and Amalfi lemon sauce with cured anchovy from Cantabrico sea, the pasta's texture is perfect - firm to the bite. Cantabrian anchovies dissolve into the sauce, imparting umami depth, while Amalfi lemon, garlic and chili add vibrancy.
Japanese codfish served with smoked potatoes purée, cappers and lemon sauce, the Japanese codfish gets a perfect sear, and accompanying smoked potato purée demonstrates technical mastery - light as air yet packed with flavour, while briny capers and lemon sauce cut through the richness. Grilled Iberico pluma served with glazed eggplant, the prized cut is expertly grilled to showcase its rich marbling and deep, nutty sweetness. The exterior develops a caramelized crust while the interior remains tender, and rests atop silky glazed eggplant.
The 6-course dinner menu begins with an elegant lobster salad in herbs sauce “Trapani style” served with Julienne of seasonal vegetables and almond sauce, a masterful composition of sweet, delicate lobster meat enveloped in a vibrant herb sauce. The dish gains depth from a silky almond emulsion, while julienned seasonal vegetables provide refreshing textural contrast. The presentation showcases Chef Schuller's meticulous attention to detail, with each component carefully arranged to create visual harmony. The following course, white asparagus soup served with slow cooked Japanese egg, squid and black ink sauce, demonstrates the chef's technical prowess, featuring a velvety smooth premium white asparagus soup, a slow-cooked Japanese egg nestles within, bursting to enrich the broth, while tender squid with black ink add dramatic visual appeal and subtle brininess.
Pasta lovers will delight in the spaghetti with green Italian baby bell pepper, clams, potatoes and Amalfi lemon skin, al dente pasta shines in this deceptively simple dish, where fresh clams mingle with sweet baby bell peppers and potatoes. The genius lies in the finishing touch - fragrant Amalfi lemon zest that awakens all the flavours with its bright citrus notes.
Grilled U.S. Prime culotte with black truffle and deep-fried ravioli with celery and anchovy, the Prime culotte steak is grilled to perfection, showcasing a beautiful char crust and juicy, medium-rare interior. Thin shavings of Australian black truffle adorn the meat, releasing their earthy aroma with each slice. The accompanying deep-fried ravioli offers a delightful crunch, revealing a savoury filling of creamy celery and umami-rich anchovy.
Both menus conclude with translucent fresh melon carpaccio that are artfully arranged, the limoncello granita provides a refreshing, slightly winey counterpoint with its crystalline texture and citrusy zing. Melon sorbet adds an extra layer of fruitiness, its smooth creaminess contrasting with the granita's icy crunch, making this dessert as visually stunning as it is delicious.
