When traveling through Taiwan, there are countless memorable people, places, and experiences — especially the food. Every trip brings new culinary discoveries, each one both surprising and deeply satisfying. This time, we visited several restaurants in Taipei, New Taipei, Taichung, and Tainan that have been featured in the MICHELIN Guide Taiwan or the 500 Dishes Award list. Though each restaurant has its own distinct style, all embody an unmistakable “Taiwanese flavour,” making every meal a delight to savour.

Fujin Tree Taiwanese Cuisine & Champagne

MICHELIN One Star / 500 Dishes Award

Opened in 2014 and a six-time Michelin One Star recipient, Fujin Tree Taiwanese Cuisine & Champagne, which is located on Dunhua North Road, Taipei, redefines Taiwanese cuisine through refined elegance. Serving authentic local dishes paired with French champagne, the experience emphasises a slow, intentional dining rhythm—Taiwanese in flavour, French in spirit.

Shi Yang Restaurant

MICHELIN Selected

It’s hard not to fall in love with Shi Yang Restaurant. Dining here feels like leaving the noise of the world behind, with only the crisp whispers of nature surrounding you. In fact, the moment you begin walking down the stone steps toward the restaurant, your state of mind already starts to change. Located far from the city and operating strictly by reservation, the restaurant draws devoted diners willing to travel long distances for its mysterious Omakase-style no-menu cuisine.

It is said that the owner was once an architectural draftsman. Upon reaching middle age, he developed a desire to retreat into the mountains and forests, which inspired him to create this dining space that coexists harmoniously with nature. The minimalist Japanese-style architecture blends wood, stone, and greenery in a simple yet refined aesthetic. With its generous use of space and Zen-like atmosphere, the place feels deeply calming — as though all negative energy has quietly melted away, replaced by a sense of peace and joy.

The restaurant serves set menus only, offering both vegetarian and non-vegetarian options, all beautifully plated. The cuisine follows the same philosophy as the architecture: minimal seasoning and uncomplicated cooking methods are used to highlight the ingredients’ pure, natural flavours. The result is exquisite.
