Mondrian Hong Kong launches on December 18, 2023 to fulfil its promise of pushing boundaries, with oversized imagination, and instilling the city with a refreshed take on luxury lifestyle and hospitality. Hyperlocal and into Inspired New Realms

Mondrian Hong Kong’s flagship bar Avoca, located on the 38th floor of the hotel. At Mondrian Hong Kong, we’re inspired. By people. People, like our new Head of Bars, the multi-award-winning local legend Joe Villanueva, who has set out to redefine the art of mixology with creatively breathtaking new cocktails inspired by some of Hong Kong’s most loved dishes and iconic local flavours. Villanueva, a 20-year veteran of Hong Kong’s ever-evolving bar scene, now brings his passion, experience, and verve to Avoca.

Villanueva will be in front and centre of Avoca. Not only has he created a locally inspired cocktail menu that is a work of art, but he will also be rolling up his sleeves and mixing the drinks to the sounds of top DJs and cultural programming. Expect a sophisticated vibe and a celebration of elevated bar culture, complemented by curated food and vibrant energy. A social meeting place celebrating elevated bar culture. 



“We took local delicacies and turned them into cocktails. Savoury cocktails are a big trend now and I’m very keen on this. Mondrian prioritises localisation, and so I have taken that to the next level. For the LGM Mary, we macerated tequila blanco with black bean chili oil from Lao Gan Ma and mixed it with a clear Bloody Mary mix that is bursting with flavour. The Sesame and Peanut Butter Sour is based on a much-loved street food favourite, which has become our take on the whiskey sour. If you look at the Clay Pot Negroni, it’s inspired by the classic Clay Pot Rice dish in Hong Kong,” said Villanueva.

Tuscany’s Dario Cecchini, lauded as the world’s greatest butcher, joins forces with rising star chef Daniele Milliani to deliver an innovative journey into reverential dining in a vibrant space created by Joyce Wang. Carna by Dario Cecchini is poised to become Hong Kong’s hot table non pareil; the first Carna in Asia and joining sister restaurants in the Bahamas and Dubai. An exclusive chef’s table tasting experience will bring diners on a journey through a variety of cuts of meat, blending time honoured traditions with the finest products, innovative flair and true tableside theatre.

Conceived as a cosy renaissance sanctuary with jaw-dropping views of Hong Kong’s harbour and sky line from the 39th floor of Mondrian Hong Kong, in the heart of the Kowloon’s dining and nightlife buzz, Carna by Dario Cecchini is set to deliver an experience in sophisticated nose-to-tail dining.

Naturally, there will be steakhouse favourites from Bistecca alla Fiorentina to Bistecca Toscana, dry aged to perfection. But also expect experiences and flavours from 18 different cuts including beef cheek, shank, tongue, bone marrow, chuck flap, flat iron, Etruscan cut, Bistecca alla Florentina and more. Other must-try dishes include Beef Tartare, Deep-fried Beef Meatballs with bone marrow, as well as the signature “Charcoal Grilled” steak with special cuts from the finest farms.

Don’t miss out on the new Nose-to-Tail Weekend Brunch, which comprises five unlimited, free-flowing homemade appetizers with refills at leisure. To follow, a primi piatti pasta course composed of Rigatoni, Braised Beef Tripe, Pork Sausage, Mint, and Pecorino is served generously with unlimited portions, whetting the appetite for Carna’s Charcoal Grill, a sumptuous grilled meat platter to share comprising Homemade Beef and Pork Sausages and Black Angus Beef Short Ribs, and a choice of signature Carna steak cuts from the finest farms, including Black Angus Cube Roll M3, Chuck Flap M5, or Carima Costata Di Manzo, accompanied by limitless sides of the casa, and a triumphant Tiramisù di Casa to finish with freshly brewed coffee.
